Warm Salmon Salad Nicoise

 

Ingredients

For dressing;

  • 1/3 cup olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons white wine vinegar (or champagne vinegar)
  • 1 tablespoon minced shallot or red onion
  • 1 clove garlic (minced)
  • 2 tablespoons basil (chopped)
  • 2 tablespoons spring onion (chopped)
  • 1 tablespoon capers (optional)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon sugar (or honey)
  • salt and pepper

For salad;

  • 4 eggs
  • 1 pound small new potatoes (halved or quartered)
  • 1 bunch thin asparagus spears or green beans
  • Olive oil
  • salt and pepper
  • 16 oz. salmon fillet (450g)
  • Assorted lettuce (washed and dried)
  • 3 medium tomatoes (cut into wedges)
