Warm Salmon Salad Nicoise

Ingredients
For dressing;
- 1/3 cup olive oil
- 2 tablespoons lemon juice
- 2 tablespoons white wine vinegar (or champagne vinegar)
- 1 tablespoon minced shallot or red onion
- 1 clove garlic (minced)
- 2 tablespoons basil (chopped)
- 2 tablespoons spring onion (chopped)
- 1 tablespoon capers (optional)
- 1 tablespoon Dijon mustard
- 1 teaspoon sugar (or honey)
- salt and pepper
For salad;
- 4 eggs
- 1 pound small new potatoes (halved or quartered)
- 1 bunch thin asparagus spears or green beans
- Olive oil
- salt and pepper
- 16 oz. salmon fillet (450g)
- Assorted lettuce (washed and dried)
- 3 medium tomatoes (cut into wedges)
