Smoked Paprika and Butterbean Houmous

Ingredients (Serves 4)
1 tin butterbeans (in water)
25g tahini paste
1 tbsp. smoked paprika
1 small onion
2 garlic cloves
1/2 tsp lemon zest
35ml extra virgin olive oil
salt and pepper to taste
Method
- In a sauté pan over a medium heat, add half of the olive oil and sweat off the onions with the smoked paprika, until the onions are soft and golden
- Remove from the heat and allow to cool
- In a food processor or blender, add the drained butter beans, garlic, lemon zest, tahini paste and seasoning, with the rest of the olive oil and the cooled onion
- Blend until smooth, taste and adjust seasoning as necessary
- Chill in the fridge for at least an hour
Keep in the fridge for up to 5 days
