Peach Quinoa Breakfast Bar

Ingredients (Serves 9)                                                                                 

2 ripe bananas

2 medium eggs

1/2 tsp vanilla extract

100g cooked quinoa

150g rolled oats

1 tin peach slice with juice, drained and roughly chopped

 

 

Method

  • Preheat oven to 180’C and line 8×8″ dish with parchment paper
  • Mash bananas and add them to a bowl with the eggs and vanilla extract, mix well
  • Add the quinoa and oats, mix. Finally stir in  chopped peaches
  • Transfer mixture to the dish and bake in the oven for 25 minutes until firm to touch
  • Allow to cool before cutting into 9 squares
  • Serve with greek yoghurt and extra peach slices
