No Added Sugar Banana Bread

Ingredients (serves 8 slices)                                                                                

125g self raising flour

1/2 tsp baking powder

1 tsp ground cinnamon

75g sultanas

50g unsalted butter, melted

1 egg

1 tbsp. low fat milk

2 tsp vanilla essence

3 ripe bananas, mashed

 

Method

  • Heat oven to 180’C/160’C/gas 4. Grease and line a 1lb loaf tin with baking parchment
  • Place the flour, baking powder, cinnamon and sultanas into a bowl and mix with a wooden spoon
  • Add melted butter, vanilla essence, egg, milk and mashed banana into another bowl, mix with a small balloon whisk or fork
  • Pour the ‘wet’ banana mixture into the ‘dry’ flour mixture and combine thoroughly with a wooden spoon
  • Pour the cake mixture into the prepared tin and bake for 30-40 minutes or until a skewer inserted in the middle comes out clean.
  • Remove from the oven, allow to cool in the tin for 10 minutes then turn out onto a wire rack
