Winter Vegetable Soup

Ingredients

1 small butternut squash, peeled and chopped into chunks

1 red onion, peeled and diced

2 potatoes, peeled and chopped

3 peppers- mixed colours, chopped into chunks

6 carrots, peeled and chopped

2 cups of lentils

2 litres of chicken stock

2 teaspoons of ground cumin

seasoning

 

Method

  • Melt a knob of butter in a good sized pan, saute the onion and potato
  • Add all the other vegetables and cumin
  • Sweat the veg for 10 mins gently with a lid on, stirring every so often so it doesn’t stick
  • Add stock and lentils, season and simmer for about 30mins until everything is soft.
  • Puree and enjoy!
