Festive Scones

Festive Scones

Ingredients (Serves 6)                                                                                 

1 large egg

454g self-raising flour

250ml milk

120g cranberries

114g butter

57g caster sugar

50g milk chocolate drops

1/2 large orange

3 tsp orange zest

3 tsp mixed spice

1 tsp baking powder

 

 

Method

  • In a large mixing bowl, combine the flour, mixed spice and baking powder. Rub the butter into the mix until combined
  • and forming the consistency of breadcrumbs
  • Mix in sugar, cranberries, chocolate drops and blitzed orange zest.
  • Make a well in the centre of the mix and crack in the egg and gently fold in the mix until combined. Gradually add enough milk to form a firm dough.
  • Sprinkle countertop with flour and roll out dough until desired thickness, cut into desired scone shape, brush top with egg wash and sprinkle sugar on.
  • Bake in a preheated oven at 170’C for 20-25 minutes until golden brown. Remove from oven and leave to rest until cooled
  • Serve with fresh cream and jam
