Carrot Cake Granola

Carrot Cake Granola

Ingredients (Serves 6)                                                                                 

300g oats

2 tsp mixed spice

125g walnuts or pecans or mix roughly chopped

1 large carrot, peeled and grated

75g unsalted butter/ coconut oil

60g honey

100g sultanas

25g pumpkin seed (optional)

 

Method

  • Heat oven to 180’C/160’C/gas 4
  • Melt butter/ coconut oil and honey in small pot over low heat.
  • Toss together the oats with mixed spice, roughly chopped nuts, sultanas, (seeds) and carrot
  • Add to hot butter and honey, mix well
  • Place in a greaseproof tray
  • Bake for 30-40 minutes
  • Allow to cool, dispense into container with lid.
  • Serve with yoghurt, milk of choice, or even custard!
