Sweet Potato and Ginger Soup

Ingredients (Serves 4)                                                                                 

1 tsp oil

1 tbsp fresh ground ginger

2-3 garlic cloves

3-4 medium sweet potatoes, peeled, chopped

1 large carrot, chopped

1 large onion, diced

1 medium potato, chopped

800ml vegetable stock

seasoning – salt, pepper

 

Method

  • Heat oil in a suitable pan, sweat the vegetables off with the ginger and garlic for 3-4 minutes
  • Add the stock and bring to the boil
  • Simmer until all the vegetables are tender
  • Remove from the heat and blend to a smooth soup
  • Season to taste
