Spicy Oven Roasted Chickpeas
Ingredients (serves 5)
400g tinned chickpeas, drained and patted dry
2 tbsp. olive/ rapeseed oil
1 tsp ground cinnamon
1 tsp chilli powder
1 tsp paprika
1/2 tsp sea salt
Method
- Preheat oven to 220’C/ gas mark 6
- Line a baking tray with greaseproof paper
- In a bowl, stir the spices and salt into the oil, add the chickpeas and stir until they are fully coated in the spice mix
- Tip the chickpeas onto the lined baking tray, spread out evenly and roast in the oven for around 30-35 minutes, until crisp
- Remove from the oven and transfer to a wire rack to cool
- The chickpeas will keep in an airtight container for 3-4 days
- Have as a snack or I love them in a wrap with some salad, squash or avocado and yoghurt.
