Spicy Oven Roasted Chickpeas

Spicy Oven Roasted Chickpeas

Ingredients (serves 5)                                                                                

400g tinned chickpeas, drained and patted dry

2 tbsp. olive/ rapeseed oil

1 tsp ground cinnamon

1 tsp chilli powder

1 tsp paprika

1/2 tsp sea salt

 

Method

  • Preheat oven to 220’C/ gas mark 6
  • Line a baking tray with greaseproof paper
  • In a bowl, stir the spices and salt into the oil, add the chickpeas and stir until they are fully coated in the spice mix
  • Tip the chickpeas onto the lined baking tray, spread out evenly and roast in the oven for around 30-35 minutes, until crisp
  • Remove from the oven and transfer to a wire rack to cool
  • The chickpeas will keep in an airtight container for 3-4 days
  • Have as a snack or I love them in a wrap with some salad, squash or avocado and yoghurt.
